My family loves enjoying this bacon egg casserole on Christmas morning, but it's perfect for a fun dinner or special brunch! It combines simple ingredients into a savory casserole with comforting flavors and the perfect amount of cheesy goodness.
You can also throw in some of your favorite veggies for added nutrition and customize this casserole however you like. This is great for serving crowds and is super easy to prepare.

- This is a great way to use up any day-old bread you might have. Stale bread will actually absorb the egg mixture even better so it might give you a better casserole!
- If you don't have stale bread, you can leave a loaf out on the counter for a little while beforehand.
- Give your casserole an extra crispy top by placing it under the broiler for a minute or two after it's done baking. Keep a close eye on it to prevent the cheese from burning.

If you're working from frozen hash browns, they may have excess moisture on them. Let them thaw slightly before adding to the casserole. Also, make sure you give the casserole a bit of time to sit before you bake it so the bread can absorb all of the liquid.
You don't have to thaw them before baking, but if you're worried about it baking all the way through or if you want to eliminate some excess moisture, you can let them thaw a bit.
The main difference is just the dish they're cooked in! A frittata is made in a pan while a casserole is made in a baking dish. Both are egg-based, but breakfast casseroles also often include something starchy like potatoes, hash browns, or bread cubes.

Bacon and Hash Brown Breakfast Casserole
Ingredients
- 6 eggs
- 1 ¾ cups milk
- ¾ teaspoon pepper
- 8 ounces bread, cubed (approximately 8 slices)
- 1 pound cooked bacon, roughly chopped
- 1 cup white mushrooms, roughly chopped (about 5 ounces)
- 1 cup hash browns (no need to thaw if you use frozen)
- 1 ½ cups shredded sharp cheddar
Instructions
- Preheat oven to 350 degrees F (175 degrees C), unless you are making this the night before.
- Beat the eggs, milk, and pepper in a medium. Set aside.6 eggs, 1 ¾ cups milk, ¾ teaspoon pepper
- Place the cubes of bread in a 9x13 baking dish sprayed with non stick cooking spray.8 ounces bread, cubed
- Layer ingredients on top in this order: bacon, mushrooms, hash browns, cheese.1 pound cooked bacon, roughly chopped, 1 cup white mushrooms, roughly chopped, 1 cup hash browns, 1 ½ cups shredded sharp cheddar
- Pour the egg mixture on top (give it a good mix, first).
- If you are making this the night before, cover and place in the refrigerator until ready to bake. Otherwise, let the dish stand for 5-10 minutes.
- Bake uncovered for 35 minutes (a little longer if the dish was in the refrigerator overnight), until the eggs are cooked and the cheese is melted and browning.
Notes
- To prep in advance, assemble the casserole ahead of time, cover and refrigerate so you can simply bake in the morning.
- If desired, add sautéed bell peppers, spinach, or tomatoes to add color and a nutritional boost. Cook them slightly before adding to the casserole.
- Swap bacon for breakfast sausage, ham, or even a vegetarian sausage option to mix up the flavors if you prefer.
- Try a mix of cheeses, like Monterey Jack, Swiss, or pepper jack for a mild kick.

thanks for the recipe! I like how slow cooker recipes are very easy to customize to individual preferences – like you mentioned you can choose your favorite enchilada sauce or choose to mince garlic instead of doing the powder.
My mother and I had a better than average relationship growing up so we were somewhat close. Kiddo and I get along truly well and she converses with me about a considerable measure of things she doesn't converse with her father (my center points) or her mother since she doesn't see me the same as them. Her mother has disillusioned her thus there is no trust there. Thus, I am protected. I trust she will keep on feeling safe with me and trust in me since we have an awesome confiding in bond.
