June 1st, wow!! How can it be June already? Wasn't Easter just last week or so? Anyway, June is National Fresh Fruit and Vegetable Month. I love this time of year because of the fresh fruits and vegetables. One thing I learned about Jersey when I moved here (many years ago) was that they produce a lot of really great fruits and vegetables in this state! Having been brought up in western PA, that was news to me. But New Jersey truly is the Garden State. I love eating all the Jersey-fresh produce this time of year!

Week in review:
I am so happy that it was warmer this week! Of course, now it is a little TOO warm, but I am not going to complain too much about that. Other than that, it was a pretty ho-hum kind of week. Thank goodness it was also a short week because of the holiday! We had a great time in the Poconos over the long weekend, even though the weather was chilly and rainy. We didn't let that stop us and we even went kayaking when the sun came out on Sunday! It was nice because we pretty much had the lake to ourselves. There were only a few other crazy people out there. Fun!

This apparently was Danielle Week on my blog, because both recipes this week were based on ideas from my friend Danielle! We had her Doggie Tot Casserole and her Chicken Pot Pie. Yum! Hopefully she will send me more of her recipes to try!
I am going to a baby shower today for a family friend who is pregnant for the first time with TWINS!! I am so excited for her and her husband. Tomorrow, Thing 2's music recital is happening. He has a drum solo planned and from what I understand it is going to be AWESOME. He is a little nervous, but I know he will do fine! Thing 1 has something up his sleeve for baking. Can't wait to see what it is!
This week will be a full week at work (blah!) and lots of kid activities in the evenings. I have some great dishes planned, though! The blogworthy ones will likely be a Fruit and Veggie Salad (since June is National Fresh Fruit and Veggie Month) and my very own Shrimp with Couscous recipe. I may change those plans depending on my mood, but right now that is what I have lined up.
