How was your week? Mine was pretty good. I didn't get to complete many of the things on my to-do list, but that is OK. I suppose I will get to them eventually! Here is one thing I can check off the list - this week's Dizzy Busy Digest!
Week in review: A few DBD's ago I wrote about Inki, our feral-gone-domestic cat, who took shelter in our house several weeks ago out of necessity since he hurt his leg and could not walk. Well, here is an update! Inki is now walking on his injured leg! The swelling has diminished quite a bit and he seems to be almost 100%! There is still a bump on his leg, but it doesn't seem to be bothering him. At this point, he has assimilated into indoor life with us and the other cats so nicely that I think we will just keep him inside. But, if it seems that he is unhappy and needs to roam, then we will revisit that decision.
This week we had Quicky Chicky and Chipper Fish for our blog-worthy dinners. Both of them were so quick and easy! I must admit that Chipper Fish was my favorite, maybe because it brings back childhood memories of all of us sitting at the dinner table and laughing and talking over my mother's Chipper Fish. I followed her recipe exactly but somehow hers seemed a bit better. But maybe that is because everything she makes tastes incredible! I also published an extra post this week, with the recipe for my quickie go-to side dish with Mushrooms and Spinach. Yum! Check it out if you missed it!
The other notable item from the past week was the launch of my latest giveaway. If you haven't entered yet, go do it now! Weekend agenda: This weekend I have been in the stores shopping for summer clothes for my boys who are GROWING too fast for words. They have absolutely no clothes for the summer that fit them, so we need to get everything. I am not big on shopping, so that is a little bit of a chore. But one that must be done!
Also, I have plans to make two new dishes this weekend and see if they are blog-worthy. I am in the mood for couscous, so both of them involve couscous. Wish me luck!
Last but not least, the best news of all, tomorrow is National Devil's Food Cake Day! Celebrate with this healthy and chocolate-y Pumpkin Cake recipe that uses devil's food cake mix! (Pardon my picture...it is one of my early ones!)
Week ahead: I have two great recipes lined up for the blog this week. The first is a Crockpot Cheeseburger recipe. This one was fun to make and eat, and has the bonus of hidden vegetables (shhhhh, don't tell the kids!). The second is Zucchini Bacon Cheese Quesadillas. The veggies are not hidden in this one, but it won't matter, the kids will eat them up anyway! Oh, and so will the grown-ups! I also have a very special guest poster lined up to do a dessert article! I don't do many desserts, but this guest poster LOVES to bake, and he is going to share his most recent creation with us. I can hardly wait!
