Today’s digest features miscellaneous thoughts on some things I love!
I love refreshing drinks. I know the weather has been erratic in many areas, but it warmed up enough here in South Jersey this past week that I am craving a preview of summertime! One of my fav cocktails for summer is really easy to make and so refreshing! Truth be told, I drink it even in the winter if I am hanging out with friends on the weekends, but there is something about the warmer weather that makes me want to fix one for myself on a weekday evening and just sit out on the back deck, relax and enjoy! All you need is ice, gin, a Diet Sierra Mist (or any lemon-lime soda) and a lime. I call it a Misty Gin. I don’t measure anything, I just splash a bit of gin into a glass full of ice and then fill it up with the Diet Sierra Mist. Perfect!
I love cats. I plan on someday becoming a crazy cat lady (although my boys would likely tell you that I have already achieved that goal). DH also loves cats, and in fact I have dubbed him a ‘cat whisperer’. The reason why is that, over the course of about a year, he has been able to tame a feral cat that started coming around our house. The cat, now named Inki, probably came from one of a few colonies that live in our area. DH noticed him in the woods behind our house last spring and started putting food out for him. One thing led to another, and over the summer Inki basically adopted us. By the fall, he had purred his way into our hearts so much that we even bought him a heated house to help him get through the winter! Anyway, he recently started having a problem with his leg (nasty infection, and now possibly a tumor…it is weird), and while we are waiting for him to recover enough to get back to his wandering ways, he is staying in our garage and also coming into the house on a daily basis, which is a huge step forward. I was just thinking that it was so lucky that DH started taming him about a year ago, or the poor thing would really be suffering now without vet care and a safe place to stay! I am so glad Inki found us, and that DH knows how to connect with cats!
I love chocolate. Here are some links to great chocolate recipes that all you chocoholics are going to love!
This one you may recognize, and it was my very first blog post ever! Even though I am cringing at this photo (I have learned a little more about food photography since taking this one) I still make this Pumpkin Cake cake on a regular basis. It is easy, delicious, and healthy. Try it!
This recipe is from an amazing blog, Sally’s Baking Addiction, that I love to visit because the pictures just make me drool. Check it out! This recipe for Skinny Double Chocolate Chip Muffins is one I will be making soon, no doubt!
OMG, prepare to have your mind blown by these Chocolate Chip Bacon Cookies with Maple Glaze by Food Babbles. Yes, you read that right, there is BACON in these COOKIES. Can it get any better than that? I submit that it cannot!
Have a great weekend, everyone!
