Happy Saturday, everyone! I am so glad the work week is over and I get a chance to catch my breath. Things have been so busy, but the biggest factor is that work has been requiring a lot of my mental energy, which is a bit draining (there is only so much to go around LOL!). So I am looking forward to slowing down a bit for a couple of days!
Week in review:
Last weekend we took a road trip to visit my parents and have a little family reunion at Kennywood Park, which is an amusement park in southwestern Pennsylvania. It is one of the BEST amusement parks ever, in my opinion. And I don't think I am saying that just because I went there every summer when growing up. 🙂 It is large enough to have a ton of great rides, but small enough that you can easily get from one place to another. That way you can ride whatever happens to fit your mood at the moment, since it is not a big deal if it is on the other side of the park! My most vivid memories of the park come from my high school years, when we had our school picnics at Kennywood, and I would run around with my friends and flirt with cute guys and giggle a lot and eat too many French fries from The Potato Patch! Ah, those were the days. But experiencing the park with my own kids is a whole different ball game, and just as enjoyable.

Special segment - Tasty Bite Tasting Party!!

This week, instead of the Weekend Agenda and Week Ahead segments, I wanted to talk about a fun tasting party that I had here at my house! A few weeks ago, a box arrived in the mail with samples of Tasty Bite products (so fun to get mail like that!). Tasty Bite is a company that makes all-natural, delicious Indian and Asian foods that are packed in pouches and specially prepared in order to be convenient and fast. I received 6 pouches that could each be microwaved in a minute and a half or less. Talk about easy! I invited our friends Melissa and Scott to come over for a tasting party and quickly heated up each pouch.
We then eagerly dug in to try the six products provided: Kung Pao Noodles, Pad Thai Noodles, Madras Lentils, Channa Masala, Thai Lime Rice, and Ginger Lentil Rice.
Honestly, I was expecting the food to be a little bland, since a lot of prepared foods tend to avoid a lot of spice. We were pleasantly surprised at the flavor in these dishes! My favorite was the Pad Thai, which had quite a little kick to it. My next favorite was the Thai Lime Rice, which I paired up with the Madras Lentils and enjoyed very much! But all six varieties were quite good!
Although I try to prepare meals with my own ingredients as opposed to pre-packaged prepared foods, I am not always able to prepare an entree AND a side dish in the whirlwind time I have between getting home from work and getting to evening activities. So I gratefully accept side dish help from time to time, and these side dishes are quick and easy and so flavorful! Thing 1 enjoyed most of them as well, except for the Pad Thai Noodles and the Kung Pao Noodles, since they were a little on the spicier side. Thing 2 liked the rice dishes, but was not willing to try the others. (That being said, I would still serve these to the family from time to time, because if we only ate what Thing 2 likes, it would be peanut butter and jelly sandwiches or biscuits for every meal!!)
