Caprese Stuffed Baked Portobello Mushrooms

Ingredients

De-stem the mushrooms and wipe  with a damp paper towel to remove dirt.

Combine olive oil and garlic salt in a small bowl.

Brush the oil mixture over the mushroom caps. Bake for 10 minutes at 425 F.

While mushrooms are baking, slice the tomatoes into 4 slices.

Remove from oven, then top with a slice of tomato and 2 pieces of mozzarella.

Baked for another 10-15 minutes, then top with paprika and fresh basil.

This simple but impressive-looking dish is perfect for serving guests or to pair with a delicious main dish!
