Easy Roasted Veggie Pasta
Drizzle chopped vegetables with oil, salt and pepper, then bake at 425 F for 20 minutes.
Combine olive oil, balsamic vinegar, garlic, salt, scallions, and basil, then set aside.
Cook rotini according to directions.
Once vegetables are done, mix with the cooked pasta. Pour in dressing and toss to coat.
Add the Parmesan cheese and stir to combine.
Top with more Parmesan cheese if desired, and serve!
