Irish Braised Corned Beef and Cabbage
Rinse beef and pat dry, then cut into two even pieces.
Mix together coriander, caraway, black pepper, thyme, and clove. Set aside.
Sear brisket in oil over medium-high heat, 3-4 minutes per side until browned.
Transfer brisket to a roasting pan or Dutch oven, then cover evenly with spice mixture.
Spread onions, carrots, garlic, cabbage, and bay leaves over top, then cover and braise at 325 F for 2 hours.
Slice the brisket against the grain.
Serve with veggies and broth and garnish with parsley.
