1cupchopped broccoli florets(cut fairly small, around ½ inch)
1cupchopped cauliflower florets(cut fairly small, around ½ inch)
1cupchopped onion
1cupprepared pizza sauce
1tablespooncurry powder, plus 2 teaspoons
2or 3 large naan, or 2 flatbreads, or 1 large pizza crust(about 14-16 ounces total bread)
2cupsshredded mozzarella cheese
Instructions
Preheat oven to 425 degrees F (220 degrees C).
In a medium microwave-safe bowl, combine the broccoli, cauliflower, and onion and microwave on high for 2 minutes to soften. Drain any liquid.

Add the 2 teaspoons of curry powder to the bowl and toss. Set aside.

In a small bowl, combine the pizza sauce and the tablespoon of curry powder.
1 cup prepared pizza sauce
Place the naan (or flatbread or pizza crust) on a baking sheet or pizza pan. Spread the sauce over the bread. Then top with the softened vegetables.
2 or 3 large naan, or 2 flatbreads, or 1 large pizza crust
Sprinkle the cheese on top.
2 cups shredded mozzarella cheese
Bake for 8-12 minutes, until cheese is melted and bubbly.
Notes
You'll mostly be cooking these pizzas to melt the cheese if you're using naan or tortillas, but if you do use a raw dough, ensure that you cook until nice and golden brown.
These individual pies are great to customize, and a great opportunity to get the kids in the kitchen and get them to help out!
