Drizzle the olive oil mixture over the potato wedges and toss. Do this in two batches if needed.
Spread the wedges over the racks on the baking sheet, in a single layer.
Bake for about 40-50 minutes or until golden brown on the outside and tender on the inside.
Sprinkle with additional dill weed and chopped parsley (optional).

You can substitute slightly crumpled parchment paper or non-stick aluminum foil if you don't have cooling racks that you can use.
These dill French fries are also great air fried! Air fry them at 400 degrees for 15-20 minutes, tossing them in the basket about ¾ of the way through cooking.
These fries are best served right out of the oven.
When serving, give a quick squeeze of a lemon over the fries for a fresh, lemon-dill flavor!
