Break or cut the graham cracker sheets in quarters at the perforations to produce 24 pieces.
6 graham cracker sheets
Spread marshmallow fluff on one side of each of 12 of the quarters. Place the remaining 12 quarters on top of the fluff to create marshmallow fluff-filled graham cracker 'sandwiches'.
1 cup marshmallow fluff
Melt the chocolate wafers in the microwave according to package directions.
7 ounces chocolate melting wafers
Dip the 12 'sandwiches' into the melted chocolate and place on the baking sheet. Sprinkle some colorful sprinkles on the chocolate if desired.
colorful sprinkles for garnish (optional)
Allow the chocolate to set. Place the baking sheet in the refrigerator for 30 minutes or the freezer for 15 minutes to speed up the process.
Notes
Sometimes the graham crackers don't break well along the perforations, so you may want to use a knife to cut the graham cracker portions.
Store any leftover s'mores bites in an airtight container. They should stay fresh for a few days, but they are best enjoyed within the first day or two for the best texture.
Get creative with your s'mores bites by sprinkling other ingredients like mini chocolate chips, chopped nuts, graham cracker crumbs, or even a drizzle of caramel or peanut butter on top.
For a fun twist, you can also use flavored marshmallow fluff, such as strawberry or caramel.
