Hidden Veggie Sloppy Joe Sliders
Your kids won't even notice the hidden vegetables in these super-cute and fun-to-eat sandwiches!

- 1 cup cauliflower florets
- 1/2 cup chopped butternut squash
- 1/4 cup chopped onion
- 1 pound Certified Angus Beef® Brand extra lean ground beef
- 1 1/2 teaspoons yellow mustard
- 3/4 cup ketchup
- 3 teaspoons brown sugar
- 3/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Mince the cauliflower using a food processor. Chop the squash or, if you want it to be well-hidden, mince it with the food processor also.
Add a little olive oil to a skillet and heat over medium-high heat. Add the onion, cauliflower and squash and cook until they begin to get soft.
Add the ground beef and cook until brown (if you don't use very lean ground beef, you may want to brown it in a separate skillet so you can easily drain the grease).
Add the remaining ingredients and mix well. Simmer for about 5 minutes.
Serve on mini whole grain rolls.
