Mushrooms and Spinach with Parmesan and Paprika

Great side dish for just about any meal. Cook and season to taste!

Instructions

  • Spray a large skillet with cooking spray (I used olive oil spray).
  • Add the mushrooms and cook over medium-high heat for about 2 minutes, until they just start to get soft.
  • Add the spinach and saute until the leaves are wilted and the mushrooms are soft.
  • Remove the spinach and mushrooms from the skillet, leaving as much of the liquid behind as possible.
  • Add the paprika and toss to distribute. Taste and add more if desired.
  • Sprinkle with parmesan cheese and serve.
