1 pound potatoes
Heat up olive oil in a frying pan over medium heat.
2 tablespoons olive oil
Add the potatoes to the frying pan, along with the seasoning. Stir to coat the potatoes evenly with oil and spices.
½ teaspoon salt,
¼ teaspoon pepper,
½ teaspoon paprika,

Cover the potatoes with a lid or aluminum foil. Leave them to cook for about 5-10 minutes, or until they are golden brown on the bottom.
Flip the potatoes, and allow them to fry until they are golden on the other side, and soft enough to easily pierce with a fork, about 5-10 minutes.
Serve the sauteed potatoes immediately while they are warm and crispy.

Notes
Keep an eye on the potatoes, as they tend to burn quickly.
Feel free to change the seasoning however you like. Any spices, dried herbs or spice mixes can work well in this recipe.
You can also garnish the potatoes with Parmesan cheese, melted cheese, lemon juice, chopped herbs or chopped nuts.
