Instructions
In a large pot over medium heat, melt the butter.
3 tablespoons butter
Add the onions, celery, carrots, and garlic. Cook for 5 minutes.

Add the flour and cook for another 2 minutes.

Add the remaining ingredients and bring the soup to a boil.
4 cups chicken broth,
2 cups half and half,
1 teaspoon dried parsley,
½ teaspoon dried oregano,
½ cup sliced mushrooms,
2 cups leftover cooked turkey, shredded,
6 ounces egg noodles
Reduce heat to a simmer and allow to cook for 6-10 minutes or until the noodles are cooked.

Shortcut suggestions:
Use frozen diced onion
Buy celery sticks already cleaned and washed
Buy carrot chips (already washed, peeled, and sliced)
Buy pre-sliced mushrooms
Use jarred minced garlic
Substitute low-salt chicken broth for regular, if desired.
Use low-fat or fat-free half and half, if desired.
Season with some black pepper, garlic powder, or cayenne for extra zing.
Sprinkle with a dash of paprika for extra color when serving.
Serve alongside crusty bread and a salad for a delicious meal, or as a side dish along with grilled cheese or other toasted sandwiches.
