Cut the potatoes into bite-sized pieces and mix the spices.
4-5 medium potatoes, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon oregano, ½ tablespoon parsley, ½ teaspoon pepper, 1 teaspoon thyme
Place the lamb roast in the center of the air fryer basket and surround it with the potatoes.

Drizzle the oil over the roast and potatoes with the oil and season both generously with the spices.
2 tablespoons olive oil
Cook at 375 degrees F for 15 to 20 minutes while monitoring the meat temperature (see temperature guide in the notes). Plan to remove the roast from the air fryer when it is about 5 degrees below the desired final temperature because it will continue to cook as it rests.
Allow the lamb to rest about 20 minutes before carving. If the potatoes need further cooking, continue to cook while the lamb rests.

Temperature guide for gauging doneness:
Rare: cook to 110 degrees F
Medium rare: cook to 120 degrees F
Medium: cook to 145 degrees F
Medium well to well: 150 degrees F or higher. (However note that it is not recommended to cook lamb past medium as it becomes dry and tough to eat.)
Letting the meat rest before carving allows the cooking to finish and the juices to settle. This will give you the best results.
