Prepare a slow cooker with nonstick cooking spray. Place the pork loin into the slow cooker.
3 pound pork loin roast
In a small bowl, combine the dry seasonings. Sprinkle the seasonings over the pork loin.
1 teaspoon garlic powder, ½ teaspoon dried rosemary, ½ teaspoon dried thyme leaves, salt and pepper to taste
Juice 1 ½ lemons. Slice the remaining lemon half into rounds about ¼ inch thick.

Combine the chicken broth, lemon juice, and vinegar. Pour the liquid around the pork loin.

Top the pork loin with the lemon slices. Cover the slow cooker and cook on low for 6-8 hours, until tender.
Remove the roast and slice to serve. Keep warm.
To make the gravy, remove two cups of the juices and place in a saucepan. Heat the juices until boiling. Stir together the cornstarch and water until mixed. Add the cornstarch slurry to the juices and continue cooking, stirring occasionally, until the gravy has reached your desired thickness.

If you don't have lemons on had, use about 4-5 tablespoons of bottled lemon juice.
Garnish with fresh rosemary or fresh thyme, if desired.
This pork loin can also be cooked on high for 3-4 hours if you're in a pinch for time.
