1poundcod, or other mild white fish(fresh, or frozen and thawed)
Caesar salad dressing(I used a light version)
Instructions
Preheat oven to 500 degrees.
Combine the crushed chips and cheese in a bowl.
1 cup crushed potato chips, ½ cup shredded cheddar cheese
Place the fish on a baking sheet coated with non-stick cooking spray or parchment paper, then brush with a generous dollop of the dressing.
1 pound cod, or other mild white fish, Caesar salad dressing
Top the fish with the chips/cheese mixture.
Bake about 8-10 minutes until the fish flakes easily with a fork.
Notes
Note that you can also use flounder, tilapia or any mild, white fish in place of the cod.
Cook this dish the day you buy the fish (if fresh) or the day you thaw it (if frozen) for the best taste.
I usually use plain potato chips, but you can experiment with different types! Salt and vinegar chips or kettle chips would be great, or try reduced sodium if you are watching your salt intake.
Cheddar or sour-cream flavored chips might not work well with the Caesar dressing, but you can substitute a little oil or mayonnaise for the dressing if you want to try them.
Test the fish with a fork when you think it's done. If it flakes easily, you are good. FIsh cooks quickly, so try not to overcook!
