These crispy air fryer zucchini fries are light and delicious and make a great guilt-free snack or side dish! They are super easy to make with only 4 ingredients (no oil!) and a perfect way to get your kids to eat more veggies.
Slice the ends of the zucchini, then slice it in half. Slice each half into 8 thick sticks for a total of 16 fries.
1 zucchini
Set the zucchini in a colander over paper towels, add the salt, and toss gently with a spoon or your hands to coat the zucchini fries with the salt. Wait 20 minutes for the moisture to get pulled from the zucchini, then pat them dry with a towel.
½ tablespoon salt
While the zucchini is sitting in the salt, beat the egg in a small bowl and place the Parmesan cheese on a plate.
1 egg, ½ cup grated Parmesan cheese
Once the zucchini has been patted dry, take each fry, dip it into the egg, then place the fry on the plate and pat the Parmesan cheese onto it.
Place the zucchini fries in the air fryer basket, with room in between for the air to circulate.
Air fry at 375 degrees F for 15 minutes, flipping the fries at the 10 minute mark.
Serve immediately.

Baking instructions: follow the instructions as written up until the fries are coated in the cheese. Bake them on a baking sheet at 425 degrees F for 20-30 minutes, or until golden brown an crispy. Give them a stir halfway through to encourage even baking.
For an even fry, do your best to cut the zucchini sticks evenly.
If you can't fit all of the fries in your air fryer basket, cook them in batches. This will ensure even and consistent cooking.
