In a bowl, whisk together lime juice, olive oil, chopped cilantro, minced garlic, honey (or sugar), cumin, salt, and pepper.
Place the chicken in a shallow dish. Coat the chicken with marinade. Cover and marinate in the refrigerator at least 30 minutes (or up to 4 hours).
Remove the chicken from the marinade and cook it until it's thoroughly done (internal temperature of 165°F).
