Season the chicken breasts, then use saute mode on your Instant Pot to sear each chicken breast for 1 minute on each side.
Remove the chicken breasts and deglaze the Instant Pot with some chicken stock before adding in potatoes, the rest of the stock, and salt.
Place the chicken breasts on top before closing the Instant Pot lid and setting it to seal.
Set the pressure cooker to cook (high pressure) for 6 minutes. When done, let it natural pressure release for 10 minutes before quick releasing.
