Place the fries on a wire rack on a baking sheet and bake for 15-20 minutes. (Tip: spray the wire rack with nonstick spray before placing the fries to help prevent sticking.)
While the fries are baking, make the basil dip by combining the mayonnaise, basil, garlic, lemon juice, ground chipotle, and salt in a small bowl. Chill the dip until the fries are done.

When slicing the eggplant, try to make all the pieces approximately the same thickness for even cooking.
For crispier fries, after baking, place them under the broiler for 3-4 minutes, but watch carefully so they don't burn.
