Place chicken, peppers, and onions into a mixing bowl, along with the oil and fajita seasoning. Toss to coat.

Add the seasoned chicken mixture to the air fryer basket. You can crowd the basket but don’t overfill it. If needed, cook the mixture in 2 batches.
Cook each batch for 10 minutes. Remove and let rest for a couple of minutes.
Warm the tortillas and add a spread of sour cream. Add the cooked chicken mixture, and top with cheese and cilantro.

Try to cut the chicken and vegetables into evenly sized pieces to ensure they cook evenly.
You can also use sliced portobello mushrooms in the main filling instead of or along with the bell peppers.
