Impress your friends and family at your next gathering with these beautiful, golden brown chipotle potatoes seasoned with garlic and roasted red pepper dressing!
Preheat the oven to 450 degrees F (or the grill to medium heat).
Wash and cube potatoes and place in a large bowl (no need to peel).
4-5 large russet potatoes
In a medium bowl, combine dressing, olive oil, chipotle spice, salt, pepper, garlic, and onion. Pour over the potatoes and toss to coat.
½ cup roasted red pepper dressing, 2 tablespoons olive oil, 1 teaspoon chipotle spice, ¼ teaspoon salt, ¼ teaspoon pepper, 2 tablespoons minced garlic, 1 cup diced yellow onion
Spray a large casserole dish with non-stick spray and pile the potatoes into the dish.
Place the uncovered dish in the oven (or onto the grill grate, then close the cover).
Cook for 45-60 minutes, stirring every 10 minutes or so, until potatoes are browned and tender.
Right before serving, sprinkle with chopped green onion for a colorful presentation.

Notes
To save time, you can use pre-cut, refrigerated potato cubes available at grocery stores to save time on chopping.
I like to use garlic paste or jarred minced garlic for easier prep.
Buy frozen or fresh pre-diced onions as another time-saving shortcut.
If you don’t have roasted red pepper dressing on hand, you can use sun-dried tomato dressing or even a chipotle dressing
Test the potatoes with a fork for tenderness. If they are browning too quickly, cover the dish with foil to prevent burning while allowing them to cook through.
Yukon gold or red potatoes can be used instead of russet, although they will yield a bit of a different texture and flavor.
Adjust the chipotle spice to your taste. You can also mix in smoked paprika for a smoky flavor without extra heat.
If desired, add your favorite herbs such as rosemary, thyme, or parsley for even more flavor.
Sprinkle grated Parmesan or crumbled feta cheese over the potatoes for added richness.
You can add other vegetables like diced bell peppers, zucchini, or carrots for additional color and flavor.
Alternate cooking methods:
Spread the potatoes on a parchment-lined baking sheet for faster cooking and easier cleanup. This will also result in crispier potatoes.
Microwave the cubed potatoes for 5-7 minutes before tossing with the dressing mixture. This can reduce oven time and ensure the potatoes cook evenly.
