Combine the lemon juice and sugar in a medium bowl. Whisk until the sugar is dissolved.
¾ cup lemon juice, ¾ cup sugar
Pour the lemon juice mixture into the water and stir.
2 cups cold water
Optional step - If you are using strawberry or other fruit slices, place them in the mold compartment. Try to stick them to the side if you can.

Divide the lemon mixture among the mold compartments, leaving a little room at the top for expansion when freezing. Cover and place the popsicle sticks in the slits of the lid.
Place in the freezer for at least 3-4 hours (overnight is best).
To easily remove the frozen popsicles from the mold, place some hot water in a pan and let the mold sit in the pan for a minute or two. Gently pull on the sticks while pushing on the bottom of the compartment to remove. Alternatively, just let the mold sit out on the counter for about 5 minutes before removing.
I used lemon juice from a bottle, but for even better taste, squeeze a couple of fresh lemons.
Add some lemon zest to the popsicle mixture before pouring into the mold for even better lemon flavor!
Try this recipe with orange juice or lime juice for a variety of flavors.
The amount of sugar can be adjusted to suit your taste.
Add a ½ cup to 1 cup of vanilla Greek yogurt to the lemon mixture for a softer, creamier popsicle. Note that this will increase the volume and so you may need an additional popsicle mold (or refrigerate the leftover until you can use your mold again).
TIP: If your sticks won't stay straight in the mold even though the slits are supposed to hold them in place, try freezing your popsicles for 1 hour and then placing the sticks in the partially frozen pops.
STORAGE: If you need to empty your mold, place any extra popsicles in plastic bags and store them in the freezer.
