Place the pineapple chunks, orange juice, Greek yogurt, and vanilla extract in a blender.

Blend until smooth.
Pour into 2 glasses. Serve garnished with orange segments and fresh mint (optional).

Notes
If using fresh pineapple, cut it into chunks and freeze them ahead of time. This makes the smoothie cold and refreshing without needing extra ice.
Canned pineapple chunks are not recommended, but if you need to use them, make sure to drain the liquid from the can before freezing the chunks.
Use good quality, real orange juice. (Not orange flavored drinks!)
Substitute plain yogurt if you don't have vanilla. Alternatively, you can use another flavor of yogurt that blends well with citrus flavors.
To make your smoothie thinner, add more orange juice. To make it thicker, add more frozen pineapple chunks, or you can add ice.
Use other types of juices and/or frozen fruit to make different flavors of smoothies!
Time saving tip: Assemble smoothie packs with the frozen pineapple chunks and measured yogurt in advance. Store them in the freezer and simply add orange juice when you're ready to blend.
