Instructions
Cut the chorizo into bite-sized pieces.
16 ounces chorizo
Combine all ingredients in the slow cooker. Cook on low 4-5 hours.

3 cups chicken broth,
1 cup chopped onion,
14.5 ounces diced tomatoes,
2 cups fresh spinach,
½ cup Parmesan cheese,
2 tablespoons minced garlic,
1 tablespoon Italian seasoning,
½ teaspoon smoked paprika
Notes
Prep Tips:
Use pre-rinsed quinoa to save a step, or rinse thoroughly under cold water to remove any bitterness.
Frozen chopped onion works great and saves time—no need to thaw.
Variation Suggestions:
Substitute ground chorizo if that’s what you have—just brown it first before adding to the slow cooker.
Try adding chopped bell peppers, black beans, or corn for extra texture and flavor.
Use kale instead of spinach, or susbtitute feta or shredded cheddar for the Parmesan.
