Season Chicken
Sprinkle both sides of the chicken cutlets with seasoned salt.

Pan Fry Chicken
Heat a thin layer of olive oil in a skillet over medium-high heat, then cook the chicken for 2 to 3 minutes on each side.

Make Sauce
Remove chicken and reduce heat to medium. Add broth, half and half, and parsley, then scrape the bottom to deglaze. Cook until the sauce simmers.

Add Chicken to Sauce
Return chicken to the skillet and spoon sauce over top. Top each cutlet with a slice of ham and a slice of cheese, then cover for a few minutes to melt the cheese.
💡 Expert Tips and Tricks
- Use a meat tenderizer to pound the cutlets flatter. Aim to make them all the same thickness for more even cooking.
- This recipe comes together pretty quickly, so be sure to prep the ham and cheese slices before you start cooking the chicken.
- A tablespoon of cornstarch can be whisked into the sauce for a thicker result.
❔ FAQs
Check for an internal temperature of at least 165 degrees F to ensure proper cooking. A digital thermometer or any meat thermometer is a good tool for this!
The French phrase "cordon bleu" translates to "blue ribbon," which signifies a chicken dish that's of high quality and reputation.
Tough chicken is likely due to overcooking. Be aware that chicken will continue to cook from residual heat even after you've turned off your stove, so keep an eye on it to be sure you don't overcook it.

📝 Substitutions and Variations
- Swiss cheese can be substituted with white cheddar, mozzarella, or American cheese if you prefer.
- Turkey cutlets can be used instead of chicken.
- Whisk some mustard into the sauce before you re-add the chicken for a pop of extra flavor.
- You can also make this as air fryer chicken cordon bleu by air frying the cutlets at 375 degrees for 8-10 minutes, then cooking for another 2 minutes with the ham and cheese. You'll need to prepare the sauce separately, but this can be done a day ahead of time if you like.
Kristin's Kitchen Tip
If you can't find chicken cutlets, you can buy boneless skinless chicken breasts and cut them into thinner pieces!
🥡 Storage and Reheating
Leftover chicken cordon bleu can be stored in an airtight container in the fridge for 3 days or so. I don't recommend freezing because of the cheese and dairy in the sauce.
To reheat, cook in a skillet over medium-low heat with a bit of extra chicken broth to prevent drying out. You can also pop your leftovers in the microwave in a pinch.

- 1 teaspoon seasoned salt
- 1 tablespoon olive oil
- ½ cup low-sodium chicken broth
- 2 tablespoons half-and-half
- 1 teaspoon dried parsley
- 4 slices deli ham
- 4 slices Swiss cheese
Instructions
- Sprinkle both sides of the chicken with the seasoned salt.4 thin chicken cutlets, 1 teaspoon seasoned salt
- Heat enough olive oil to coat the bottom of a large skillet over medium heat. Add the chicken and cook for 2 to 3 minutes on each side, or until the chicken is golden.1 tablespoon olive oil
- Remove the chicken from the pan, reduce the heat to medium, and add the chicken broth, half-and-half, and dried parsley to the pan. Scrape the pan with a spatula and stir well to deglaze. Cook for a few minutes, until the sauce starts to simmer.½ cup low-sodium chicken broth, 2 tablespoons half-and-half, 1 teaspoon dried parsley
- Return the chicken to the skillet and spoon some sauce on top of each piece. Top each with a slice of ham and a slice of cheese. Cover the skillet with a lid and cook on low for 3 to 4 minutes, or until the cheese melts.4 slices deli ham, 4 slices Swiss cheese
- Serve the sauce with the chicken.
Notes
Prep Tips:
- Pound the chicken cutlets lightly if they're not all the same thickness so they cook more evenly.
- Have the ham and cheese slices handy before starting, since this recipe comes together quickly.
- If you would like a slightly thicker sauce, whisk 1 teaspoon cornstarch into the broth before simmering.
Variation Suggestions:
- Swap the Swiss cheese for provolone, mozzarella, or white cheddar if desired.
- You can use turkey cutlets instead of chicken.
- If you would like to add a mustard flavor to the sauce, whisk 1 teaspoon of it into the sauce before returning the chicken.
Serving Suggestions:
- This dish pairs well with roasted or steamed vegetables like broccoli, green beans, or asparagus.
- Serve the chicken over rice, buttered noodles, or mashed potatoes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a covered skillet over low heat with a splash of broth to keep the chicken moist.
- Freezing doesn't work well since the cheese and sauce can separate.
- Season the chicken cutlets and cook them in the air fryer at 375 degrees F for 8-10 minutes, flipping halfway through, until the chicken is done.
- Once cooked, top each cutlet with ham and Swiss, then return them to the air fryer for about 2 minutes to melt the cheese.
- For the sauce, prepare it separately on the stovetop and spoon it over the chicken before serving.
