It's definitely soup season and there's nothing better than enjoying a bowl of warm soup on a cold winter day! This Instant Pot minestrone soup is a classic that has been updated to be pressure cooker friendly.
You'll love how this soup is filled with healthy vegetables, hearty beans, and pasta! Despite the amount of ingredients listed for this recipe, it's actually super simple to make! It's also super customizable as you can always skip or add vegetables you like or don't like. It's a very forgiving recipe and you can pretty much adjust it to you and your family's personal taste!

🥘 Ingredients Needed
- Olive Oil - You'll need some olive oil to saute the onions and garlic.
- Onion - We don't use half an onion but you're welcomed to add more if you'd like!
- Garlic - The more the merrier in my opinion!
- Carrots, Celery, and Zucchini - If you like your vegetables a bit chunkier with more of a bite, feel free to cut them larger.
- Beans - I use white beans and kidney beans.
- Butternut Squash - I like using frozen butternut squash to get around prepping and cutting it myself!
- Dried Herbs - I like to use a bay leaf, dried basil, and dried oregano.
- Diced Tomatoes & Tomato Paste - minestrone is not complete without that tomato flavor!
- Vegetable Stock - I use Better Than Bouillon to make my stock.
- Spinach - I really like baby spinach but you're welcome to change it to a different leafy green.
- Pasta - I like to use ditalini pasta as they're the perfect size to fit in your spoon with the other ingredients!
🔪 Instructions
- On saute mode on the Instant Pot, add the olive oil and the onions. Saute for 1-2 minutes before adding in the minced garlic. Saute for a minute or until the garlic is fragrant.
- Turn off saute mode and add in the beans, celery, carrots, and butternut squash.
- Next, add in the dried herbs (bay leaf, dried basil, and dried oregano).
- On top, add the canned diced tomatoes and tomato paste. Do not stir.
- Add in the vegetable stock.
- Close the lid and set it to sealing and pressure cook for 5 minutes. It'll take around 10 minutes to come up to pressure. When done, let it natural pressure release for 15 minutes before quick releasing.
- Turn on saute mode again and add the spinach, zucchini, and pasta.
- Simmer for 8 minutes or until the pasta has cooked through and enjoy.

Yes! Frozen vegetables are perfect for minestrone soup!
You can use any pasta that you have on hand. Just be sure to simmer it until it's al dente as different pastas take different times to cook.
If you'd like to freeze this soup, just skip adding in the pasta as it doesn't hold up well in the freezer. Add the cooked pasta when you've thawed the soup and reheated it.
Natural Pressure Release is when you let the Instant Pot sit on its own when it's pressure cycle to be over. The Instant Pot will gradually release pressure and steam as it cools.
💭 Top Tips
- I like to add the beans early on to cook under pressure as I prefer them softer. If you prefer them to have a bit more of a bite to them, you can put them in when the pasta.
- Same goes for the butternut squash.
- If you plan on making this ahead of time, add cooked pasta when you're ready to enjoy. The pasta will soak up the soup!
- Do not stir in the tomatoes and tomato paste so it doesn't end up at the bottom and trigger a burn notice.
- Try to cut your vegetables to around the same size as each other so when they cook, they cook evenly.
This recipe is best eaten immediately as the pasta will soak up the soup if left for too long.
📖 Variations
- Want to make this a little bit spicier? Add red chili flakes to the minestrone at the end.
- You can also add Parmesan cheese on top.
- Add some meat to this if you'd like it to be meatier. You can add some ground beef, sausage, shredded chicken, etc.
- You can add any seasonal ingredients to the soup such as potatoes, green beans, peas, etc.
- You can swap the dried herbs for dried rosemary, dried thyme, etc.
- You can swap the spinach for kale.
