This Indian Butter Chicken is so simple, just throw it in a slow cooker and you've got an easy meal!

I am so excited to share this post with you today. A good friend of mine, Sarah, has published an AWESOME cookbook. If you are a busy mom, you simply must get this book. It became my all-time favorite cookbook about 10 minutes after I started looking through it!
The book is called 'The Magical Slow Cooker: Recipes for Busy Moms". I am loving it because it has all kinds of recipes in it, from the expected soups, stews, and main dishes, to side dishes and breakfast dishes, and even has a bunch of dessert recipes! Slow Cooker Cheesecake, anyone?? You have to try this to believe it!
I am planning on eventually eating my way through the entire book (focusing on that amazing dessert section!), but for starters, I decided to go with a dinner.
As I was flipping through the main dish section, I noticed this one recipe that looked SUPER easy and delicious, and I didn't need to look any further. I knew this recipe and I were destined to be together!
There are only 3 ingredients (not counting salt and pepper and the optional cilantro) - this recipe just about makes itself! It took me literally 5 minutes to throw everything in the crock pot, and then I forgot about the whole thing until about 20 minutes before I wanted to serve dinner.
At that point, I made some quinoa (the recipe calls for rice, but I was out, and the quinoa worked just as well), steamed some asparagus, and bam! Dinner was ready!
Kids loved it, DH loved it, and I loved it. Dinner that night was a major success, and I still had the energy to take pictures of it for you! 😀

Slow Cooker Indian Butter Chicken
Ingredients
- 2 pounds chicken thighs (boneless and skinless)
- 15 ounces Patak's Butter Chicken Simmer Sauce
- Rice for serving (I used quinoa)
- Salt and pepper to taste
- Cilantro for garnish (optional)
Instructions
- Place the chicken thighs in the slow cooker.2 pounds chicken thighs
- Pour the simmer sauce on top.15 ounces Patak's Butter Chicken Simmer Sauce
- Cook on low for 8 hours.
- Serve over rice or quinoa.Rice for serving

Thank you for telling me how to put sauce and chicken into a slow cooker. I have used chicken breast instead of thigh, and added onions and Roma tomato. I hope it doesn’t blow up because I didn’t follow the recipe to the letter.

Those sound like great ideas! Hopefully the tomato didn't cause the sauce to be too thin, since they usually have a lot of liquid. If that happens, I would say that next time you maybe can add them in at the very end or even save them to add on top when serving. Thanks for stopping by!

Can the chicken thighs be frozen?

Yes, they can be frozen! Just make sure they are fully cooked before serving (internal temperature of at least 165 degrees F).
