💡 Expert Tips and Tricks
- If you have chicken leftovers feel free to use though--otherwise you can bake some chicken breasts and dice them up, or purchase a rotisserie chicken and dice or shred that.
- Be sure to drain some of the liquid from the salsa to avoid the chicken from becoming too watery.
- Frozen corn can be added right from the freezer--no need to thaw first!
- The same is true of frozen chicken, but it'll need a couple extra minutes of cooking time before you add the other ingredients.
❔ FAQs
Luckily, this recipe calls for cooked chicken so you won't need to worry about that! But generally, an internal temperature of 165 indicates fully cooked chicken.
A cast iron skillet is always a good option for this kind of recipe, but anything nonstick that has high sides will work just fine!

📝 Substitutions and Variations
- Black beans or pinto beans can be used instead of butter beans for a different flavor.
- Pineapple salsa or peach salsa are also great options instead of the mango! You could even mix two or more varieties together for a unique flavor blend.
- For an extra veggie boost, mix in spinach and/or kale to wilt towards the end of cooking.
- Add some heat with diced jalapeno or a splash of hot sauce.
Kristin’s Kitchen Tip
Using leftover chicken from another recipe is a great way to give it new life with this mango salsa chicken!
🥡 Storage and Reheating
Allow any leftovers to cool and transfer to an airtight container. Store in the fridge for 3 days or so. I don't recommend freezing because the texture of the beans will be altered.
To reheat, microwave or transfer back to a skillet over medium heat until heated through.
