Make Slurry
In a small bowl, combine cornstarch with 1 and ½ tablespoons water.

Slice Salmon
Cut the salmon into bite sized pieces.

Cook Salmon
Heat olive oil in a skillet over medium high heat. Cook salmon in a single layer for about 2 minutes, then flip and cook another minute or two.

Cook Broccoli
Add broccoli and teriyaki sauce to the pan and cook until the broccoli is heated through.

Make Sauce
Add the cornstarch slurry to the pan and mix well, then cook until the sauce has properly thickened.
💡 Expert Tips and Tricks
- Evenly-sized salmon bites will all cook at the same rate.
- Be sure to avoid overcrowding the pan--you may need to cook in batches if you have a lot of salmon.
- Fresh broccoli works instead of frozen, just steam it in the microwave for a few minutes before adding it to the salmon.
❔ FAQs
Once the salmon is an opaque pink and the top easily flakes away when scraped with a fork, the salmon should be good to go. Because these are salmon bites, it will be easier and quicker to cook them all the way through.
If you haven't properly integrated the cornstarch slurry, your sauce may end up on the thin or watery side. Be sure to dissolve the cornstarch in water before adding it to the dish so it can mix well with the teriyaki sauce and help it thicken.
The primary reason salmon dries out is overcooking, so just keep an eye on it and make sure you don't let it cook longer than it needs to. Aside from that, also make sure there's plenty of sauce.

📝 Substitutions and Variations
- Instead of (or alongside) broccoli, you can use snap peas, green beans, or a stir fry veggie mix.
- Store bought and homemade teriyaki sauce will both work great in this recipe.
- For some heat, add sriracha or a sprinkle of red pepper flakes.
- If you want a plant-based protein, use tofu instead of salmon.
Kristin's Kitchen Tip
Cutting the salmon into even pieces will ensure even cooking and the perfect end result!
🥡 Storage and Reheating
If you have leftover teriyaki salmon bites, store in an airtight container in the fridge for 2 to 3 days. I recommend reheating in a skillet or in the microwave in a pinch--a splash of water may be necessary to prevent the sauce from getting too thick.
