👩🏻🍳 Why You'll Love This Recipe
These oven chicken quesadillas are an excellent meal choice for a fast but flavorful weeknight dinner. You only need 5 ingredients and 20 minutes to prep and cook these quesadillas, and they're extremely customizable to your preferences!
Using shredded chicken for quesadillas is a great way to utilize leftovers, or you could buy a pre-cooked rotisserie chicken to make things easy.
And if you love buffalo chicken, you'll also love this Crock Pot Buffalo Chicken Mac and Cheese, or a lightened up Healthy Buffalo Chicken Dip.
🥘 Ingredients Needed
- shredded chicken - this is a great way to use up any leftover chicken you may have, or you can purchase a rotisserie chicken and shred it.
- buffalo sauce - gives these quesadillas a bold flavor and a bit of a kick.
- cheese - I like to use Colby Jack, but feel free to use whatever you have on hand.
- tortillas - I've found flour tortillas tend to work best.
- blue cheese - a classic flavor pairing with buffalo sauce.
🔪 Instructions
- Add chicken, buffalo sauce, and cheese to a large bowl.
- Mix until well combined.
- Arrange tortillas on a baking sheet so they form a single layer when folded.
- Spread the chicken mixture over half of each tortilla.
- Fold over the other half and bake at 400 degrees for 6 minutes, then flip and bake another 6-7 minutes. Serve with blue cheese.
👪 FAQs
You'll want something that melts well and gets nice and stretchy for the best effect. Colby Jack, Pepper Jack, American, Cheddar, Mozzarella, and Asiago are all good options.
The secret to a crispy tortilla is just a small amount of fat, whether this be in the form of butter or oil. In the oven they get naturally crispy in the baking process, but if you want to really enhance the crisp factor feel free to spray very lightly with some oil.
In most cases, a quesadilla will seal itself because of the melted cheese. You may need to add cheese closer to the edges to encourage this, but aside from that your quesadilla will likely seal on its own!
Yes, these oven baked quesadillas can also be made in a pan. You'll be able to control the amount of crispiness on the tortilla, but one downside to this method is you may only be able to cook one or two at a time.
💭 Expert Tips and Tricks
- Use leftover chicken, rotisserie chicken, or any kind of pre-cooked chicken to make prep a breeze.
- Warm chicken is easier to shred than cold, so if using leftover chicken pop it in the microwave first.
- You can also easily cook chicken breasts for this recipe by popping them in the oven at 400 degrees until cooked all the way through.
- To enhance the presentation, drizzle with more buffalo sauce or blue cheese dressing or crumbles.

Buffalo chicken quesadillas are a great option to make ahead of time and then reheat for a quick but satisfying lunch or snack!
📖 Substitutions and Variations
- Ranch dressing and sour cream are also good for dipping sauces.
- For even more flavor, include any of the following in your oven baked quesadillas: bacon bits, red onion, chives, bell pepper, zucchini, spinach.
- Mexican blend shredded cheese is another good option for a flavorful cheese that pairs well with the other ingredients.
🥫 Storage and Reheating
Allow any leftovers to cool completely before storing in an airtight container in the fridge for 3-4 days. To reheat, I recommend doing this in a pan or popping back in the oven at 350 degrees F for about 10 minutes, and then continuing in 5 minute increments.
You can also freeze these buffalo chicken quesadillas. Wrap each quesadilla in some parchment paper and freeze for up to 4 months.
⏲️ Make Ahead Instructions
If you want to cook the chicken yourself, place boneless skinless chicken breasts on a baking sheet and cook at 400 degrees F for 20 to 25 minutes. They're done when an internal thermometer reads 165. You can season them with some salt and pepper, or other spices if you want!
Feel free to shred the chicken right after cooking and store in the fridge until it's time to assemble and cook your quesadillas.
