🧂 Ingredients Needed
- rump roast - I used a 2 ½ pound roast, but make sure whatever size you buy will fit in your slow cooker.
- seasonings - a simple combination of salt and pepper with fresh thyme and fresh rosemary is all you need to infuse your roast with flavor.
- veggies - I used classic potatoes, onions, and carrots, which slow cook to tender perfection.
- beef broth - you could use vegetable broth or chicken stock instead of beef stock, but I like the added beefy flavor.
🔪 Instructions
- Place the roast in the slow cooker and season all over with salt and pepper.
- Peel and slice the onions. Add the carrots to the slow cooker, then add the onions and the potatoes.
- Place herb sprigs on top of the veggies and pour in the beef broth.
- Slow cook on the low setting for 6 to 7 hours or on high temperature for 4 to 5 hours. Remove the roast and allow it to rest for 10 to 15 minutes, then carve and serve!

❔ FAQs
This cut of beef comes from the top of the back end of the cow, just about as far back as you can go before the tail. A rump roast is typically a lean cut of beef and is always boneless, and because it tends to be a slightly tough piece of meat, it's great for a recipe that calls for a longer cook time at low temperature.
Yes, slow cooking is a great way to ensure a great cut of meat like a rump roast or a chuck roast gets nice and tender. Slow cooking allows the muscle fibers and connective tissue to gradually break down, which will lead to a nice moist and juicy roast.
It is possible to overcook a rump roast, which can make it tough and dry. Because this recipe adds liquid, it's less likely you'll overcook the roast, but be sure to check it at either 6 hours or 4 hours depending on the heat you're cooking it.
💭 Expert Tips and Tricks
- When selecting a roast, look for one with plenty of fat marbling. This will ensure a more tender and flavorful result.
- Use a meat thermometer or another kind of instant read thermometer in the thickest part of the roast and check for an internal temperature of at least 145 degrees F. If you prefer your roast cooked to medium doneness, wait for 160 degrees F.
- For best results with this crock pot rump roast recipe, slice the roast against the grain. This will prevent chewiness and lead to more tender meat.
- Don't get rid of any leftover cooking liquid! Spoon over your crock pot beef rump roast for extra flavor.
📌 If you've always wondered how to make a tender rump roast without too much time and effort, this easy slow cooker recipe is perfect for you! It's a great recipe for an easy family dinner idea with only a few minutes of prep time.
💡 Substitutions and Variations
- Add flavor by searing the roast in some olive oil in a skillet over medium-high heat.
- Create a deeper and richer flavor with some cooking wine or a splash of Worcestershire sauce for a particularly hearty meal.
- Use additional seasonings like garlic powder, onion powder, paprika, oregano, or sage for even more savory flavor.
- Garnish with fresh parsley or more thyme for a pop of color and herbal flavor.
- If you want to create a richer and thicker sauce, add a bit of cornstarch slurry to the cooking liquid about 30 minutes before the roast is done cooking. This will result in a delicious gravy, but if you find that the brown gravy is too thick, you can also add a little water to thin it out again.
🥫 Storage and Reheating
Allow your crock pot beef rump roast to cool to room temperature, then transfer the beef and veggies to an airtight container. It will last in the fridge for 3 to 4 days, or in the freezer for a few months.
Reheat in the microwave, or bake in the oven at 350 degrees F. Cover with aluminum foil if baking to prevent drying out. From frozen, allow the roast and veggies to thaw in the fridge first.
🍴 What To Serve With This Dish
Everything you need for a complete meal is included in this dish, but you can also add a side dish or two for a dinner that will serve more people! Pair with Cheddar Bacon Bread or this Garlic Parmesan Bread, or buy a nice French baguette from the grocery store. You can also add another veggie like Air Fryer Broccoli or Roasted Brussels Sprouts and Carrots for more nutrition.
