- onion and bell pepper strips - I prefer to use frozen and pre-chopped onion and pepper for super easy prep. You can chop your own fresh veggies if you prefer.
- minced garlic - buying jarred minced garlic is a great way to cut down on prep time, but fresh garlic can be used as well.
- cumin - for a bit of extra warm flavor.
- diced tomatoes - I recommend the Rotel brand that comes with green chilies as well for a bit of extra flavor.
- brown rice - healthy and filling, you can substitute brown rice for any rice of your choosing.
- broth - vegetable broth and chicken broth both work well here.
- black beans - canned black beans are typically cheap, are readily available, and will last for long periods of time in your pantry.
- fresh cilantro - this optional garnish is a great way to add a pop of flavor and color.

- Saute the onion and pepper strips in a pot until they begin to thaw.
- Add garlic, cumin, and tomatoes, then cook another 5 minutes or so.
- Pour in the broth and rice, stir the mixture, and bring to a boil.

- Stir in black beans and chopped cilantro.
- Remove from heat, then allow the mixture to sit for a moment and serve.

Ingredients
- 12 ounces frozen onion and bell pepper strips (any size package from 10-14 ounces will work)
- 1 tablespoon minced garlic
- 1 teaspoon cumin
- 14.5 ounces diced tomatoes with green chilies (1 can)
- 2 cups brown rice (uncooked)
- 4 cups broth (vegetable or chicken)
- 15 ounces black beans (1 can, drained and rinsed)
- 3 tablespoons chopped cilantro (optional)
Instructions
- Place the onion and pepper strips in a large pot over medium high heat, and saute until they start to thaw.12 ounces frozen onion and bell pepper strips
- Add the garlic, cumin, and tomatoes, and cook until the mixture starts to get hot, about 5 minutes.1 tablespoon minced garlic, 1 teaspoon cumin, 14.5 ounces diced tomatoes with green chilies
- Mix in the rice and the broth and bring to a boil. Then reduce the heat to low, cover the pot, and simmer for 40 minutes or until the liquid is absorbed and the rice is tender.2 cups brown rice, 4 cups broth
- Stir in the black beans and the cilantro (if using). Remove from the heat and let the mixture sit for a few minutes, then serve.15 ounces black beans, 3 tablespoons chopped cilantro
