💡 Expert Tips and Tricks
- If you want the filling to be extra smooth, push the yolks through a mesh strainer before mixing with the other ingredients.
- A piping bag with a fancy tip is a great way to upgrade your presentation, but a simple plastic bag with a snipped corner can also work.
- If you want, you can also simply spoon dollops of the filling back into the eggs.
- Prepare up to 24 hours in advance and store covered in the fridge.
❔ FAQs
Around the 18th and 19th centuries, the word "deviled" came to be used to describe heavily seasoned or spicy foods. In some areas, the dish is also called stuffed eggs or even angel eggs.
The likely culprit here is overcooking. Be sure to transfer the eggs to a cold water bath right when they've finished cooking so the residual heat doesn't continue to cook them.
If you notice a dark green hue in your cooked yolks, this is a result of a harmless chemical reaction! Sulfur in the egg whites can react with iron in the yolks, which creates ferrous oxide. This is perfectly harmless, but ensuring the eggs don't overcook is a great way to prevent this reaction from occurring.

📝 Substitutions and Variations
- If you want a slightly sharper flavor, use Dijon instead of yellow mustard.
- For variation in the flavors add some sweet pickle relish, either on top of the filling or mixed in.
- Like it spicy? Add a dash of cayenne pepper or some hot sauce.
- To give your classic deviled eggs a richer and smokier flavor, stir in some bacon bits.
Kristin's Kitchen Tip
Be sure to stop the cooking process by transferring finished eggs to a bowl of cold water! This will keeps the yolks nice and bright yellow and prevent the whites from getting tough or rubbery.
🥡 Storage and Reheating
You can store your easy deviled eggs in the fridge for up to 2 days or so. Feel free to serve them cold, or let them come up closer to room temperature if you prefer.
I don't recommend freezing deviled eggs, as the textures of the whites and yolk filling will be a bit strange and grainy after thawing.
