Roasting Brussels sprouts in the oven is by far my favorite way to prepare them. They get tender but not mushy - it's the perfect texture. The olive oil, garlic salt, and paprika really complement the sprout. So yummy! Even if you never liked Brussels sprouts before, give them another try! You may find that you like them!
The best parts are the little leaves that fall off the outside of the sprouts, and then get a little burnt in the oven. They are crispy and crunchy and so tasty. You almost feel like you are eating potato chips!
I assure you, even my picky kid who wants to eat only carbs and avoids most vegetables like the plague loves this side dish!

🥘 Ingredients Needed
- Brussels sprouts - I've found it's best to use fresh sprouts for this recipe.
- olive oil - helps the outside of your sprouts get nice and crispy.
- minced garlic - a not-so-secret ingredients that makes just about any veggie taste incredible!
- salt and paprika - a simple but effective seasoning duo that pairs well with the garlic.
- pepper - this is optional for if you want a little more flavor.

- Trim your Brussels sprouts and place them in a bowl.
- Drizzle with some olive oil.
- Add the paprika, garlic, and salt.
- Include pepper now if you choose to use it.
- Toss the ingredients until everything is evenly coated.
- Bake at 400 degrees F for 20-25 minutes. Stir about halfway through.

No, it's not necessary to blanche them first. Blanching the sprouts is one way to ensure that they're tender on the inside and caramelized on the outside, but I've found that this recipe yields that result even without the extra step.
You may not be using enough oil. The fat neutralizes and plays well with the natural bitterness of Brussels sprouts, so try drizzling a bit more olive oil onto your sprouts before roasting.
Cutting them in half will allow some of their natural moisture to escape. You'll also want to space them out enough on the baking sheet so they have plenty of room to roast. Stirring halfway through the process is also a good way to prevent sogginess.
💭 Other Helpful Tips
- Be sure to give the sprouts plenty of room on the baking sheet. If they're touching and overlapping, you'll lose some of the crispiness on the outside and the roast won't be as even.
- Roasting cut-side down is another great way to capitalize on the flavor of the sprouts and ensure even cooking.
- If you want to make this recipe from frozen Brussels sprouts, be sure to let them thaw completely and pat them dry. You may also want to pop them in the oven for a few minutes without the oil and spices to dry them out further before actually cooking them.

Roasted Brussels Sprouts with Garlic
Ingredients
- 1 pound fresh Brussels sprouts
- 1-2 tablespoons olive oil
- 1 tablespoon minced garlic
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper (optional)
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Trim the Brussels sprouts and place them in a large bowl.1 pound fresh Brussels sprouts
- Drizzle with olive oil. I use 1 tablespoon when I am trying to eat light, but I use up to 2 tablespoon when I want them to be extra-yummy!1-2 tablespoons olive oil
- Add in the garlic, paprika, and salt. Include the pepper if you are using it.1 tablespoon minced garlic, ½ teaspoon paprika, ¼ teaspoon salt, ¼ teaspoon pepper
- Toss to coat, and place on a baking sheet.
- Bake 20-25 minutes, stir once after 15 minutes.
Notes
- Replace the salt with garlic salt if your family likes things extra-garlicky.
- Don't crowd the sprouts on the baking sheet. They need to have some room around them to roast evenly.
- Change things up by drizzling the sprouts with balsamic vinegar or lemon juice, or sprinkling with grated Parmesan after roasting.
- Add in a pinch of cayenne pepper or red pepper flakes prior to roasting to kick things up a notch!
- Use smoked paprika instead of regular for a smoky, earthy flavor.
