Start Dough
In a mixing bowl, cut the butter into the flour.

Continue Dough
Add sugar, baking powder, salt, and Parmesan, and mix well.

Add Olives
Fold the chopped olives into your dough.

Mix in Milk
Slowly add the milk to the dry ingredients and mix until well combined.

Prepare Dough
Separate a chunk of the dough and form into a log. Slice into 2-inch pieces. Repeat until all of the dough is used up.

Bake
Place pretzel pieces on a baking sheet and brush with egg wash. Bake at 400 degrees F for 12 to 14 minutes.
💡 Expert Tips and Tricks
- Allow the butter to soften slightly to make it easier to add to the dough.
- Finely chop the olives to make sure the flavor is distributed well throughout the dough.
- Make sure there's space between the soft pretzel bites while they bake for better air circulation. You may have to bake in batches or on two baking sheets.
❔ FAQs
A traditional pretzel sits in an alkaline water bath before baking (typically with baking soda or lye), which gives them that signature brown exterior and distinct flavor. These pretzel nuggets are a little closer to biscuits.
The egg wash is an optional step, but it will give your pretzels a nice shine and golden brown exterior. It's also great if you want to sprinkle salt over the dough - an egg wash helps the salt stick.
This is likely due to underbaking, which can happen if your oven isn't hot enough, if you don't leave the soft pretzel bites in for long enough, or if you crowd them too closely on the baking sheet.

📝 Substitutions and Variations
- Feel free to use black olives instead of green, or combine both of them for a more complex flavor.
- For extra flavor, add dried herbs to the dough like rosemary, thyme, or oregano.
- Parmesan can be substituted for asiago or shredded cheddar. Shred your own cheese for best results!
Kristin's Kitchen Tip
Be sure to make your pretzel nuggets as evenly sized as possible so they all cook the same!
🥡 Storage and Reheating
If you have leftover soft pretzel bites, allow them to cool and transfer to an airtight container. Store at room temperature for 3 to 4 days. You can also keep them in the fridge for about a week, or freeze them for up to 2 months.
Pretzel nuggets can be reheated in the oven or air fryer at 350 degrees. You can even reheat them right from frozen - they'll just need a couple of extra minutes!
