For the Eggplant:
- 2 small eggplants
- Olive oil for drizzling
- Salt and pepper to taste
For the Garlic Dill Yogurt Sauce:
- ½ cup plain yogurt
- 2 garlic cloves, minced
- ½ lemon, juiced
- Fresh dill, chopped (to taste)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees F.
- Wash and dry the eggplants, then halve them. Score the flesh diagonally in each direction to create a diagonal pattern.2 small eggplants

- Place the eggplants, cut side down, on a baking sheet. Roast for 35-40 minutes until tender and caramelized.
