💚 About This Recipe
Butternut squash is high in vitamin A and vitamin C, and contains potassium and fiber as well. When roasted, it becomes sweet and buttery, and tastes so good. I decided to pair it with the savory, salty flavor of Italian sausage and the combination was amazing!
This dish is really easy to make, especially if you buy the butternut squash already peeled and diced, which is what I do. It is worth it to me to pay a bit extra to have that part of the work already done!

💡 Substitutions and Variations
- Italian sausage is a great protein for this dish. Use sweet or spicy, whatever you prefer.
- Kielbasa is a fantastic substitute for sausage. I've made it with both and they're slightly different in flavor but both turn out fantastic!
- Some butternut squash substitutes include Hubbard squash, sugar pumpkin squash, acorn squash, or a similar variety called buttercup squash.
- Feel free to add more seasonings to this dish for more flavor.
- Roast your squash alongside other vegetables for even more nutrition. Other root vegetables like carrots, beets, and turnips are great options. You can also try potatoes or sweet potatoes, white or yellow onions, or broccoli!
🔊 What readers are saying...
"Wow … is this a keeper! Made this last night from our stash of homegrown butternut stored in the basement. Followed recipe with the only exception as I do not have garlic salt so I used garlic powder and salt and pepper. I made sure to spread it out so that I had plenty of room to add the Kielbasa and onion later in the cooking process. We loved it. My husband ate all the leftovers for breakfast! Will make again soon as we have lots of butternut in storage!"

🥫 Storage and Reheating
Store leftovers in an airtight container in the fridge for up to a week. To reheat, I recommend popping back into the oven at around 350 degrees. In the microwave, your squash and sausage might get soggy.
You can also freeze your leftovers for 6 months or more. Allow them to thaw in the fridge for a few hours or overnight before reheating.
🍴 What To Serve With This Dish
With protein and veggies, this butternut squash and sausage dish has everything you need for a full and healthy meal! However, you could pair it with Easy Air Fryer Broccoli or Air Fryer Brussels Sprouts for even more nutrition. Sheet Pan Butternut Squash and Sausage
Ingredients
- 20 ounces diced butternut squash (about 4 cups)
- 1 tablespoon olive oil
- ¼ teaspoon garlic salt
- 14 ounces Italian sausage (use sweet or spicy, whichever you prefer)
- 1 cup diced red onion
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the diced butternut squash, olive oil, and garlic salt, and mix until coated.20 ounces diced butternut squash, 1 tablespoon olive oil, ¼ teaspoon garlic salt
- Spread the butternut squash on a baking sheet in a single layer. If your baking sheet is not large, use two baking sheets so that you will have room to add the onion and sausage later.
- Roast the squash for 20 minutes.
- Remove the baking sheets and stir the squash. Add the sausage and red onion to the baking sheets, return to the oven and roast for another 15 minutes.14 ounces Italian sausage, 1 cup diced red onion
- Stir and roast for another 5-10 minutes if needed.
- Serve over rice or on its own.
Notes
- I like to buy pre-diced butternut squash to save time. However, often the pieces are a little two large so I cut them in half before tossing with the olive oil and garlic salt.
- Use a very sharp knife to make slicing the sausage a bit easier (but be careful!).
- You can use sausage or kielbasa. I have done both and this recipe works well with either. Kielbasa is a little easier to work with when it comes to cutting into pieces.

What a yummy recipe! I am on a delicata kick since I found it doesn't need peeling, so I would do it with that and vegetarian sausage Tofurky. My post features an Asian soup made with turnips.

This looks great and so easy, which is always a super plus! I've never cooked with kielbasa, but I happen to have some links of turkey sausage already - how do you think that would work as a substitute with this recipe?
Kristin King says
I definitely think that would work! Anything with a lot of spices and a little bit of saltiness would be awesome. Let me know how it turns out if you try that. Thanks for stopping by!
