Add Pork
Place your pork in the bottom of the slow cooker.

Season
Sprinkle the ranch and au jus seasonings over top of the pork. Add butter and peppers and a few tablespoons of pepper brine.

Cook and Shred
Cover and cook on low for 8 hours or on high for 4 to 5 hours, then use two forks to shred the pork.
💡 Expert Tips and Tricks
- To prevent excess grease in the liquid, trim fat from the pork before slow cooking.
- Be sure to keep the crockpot lid closed tight while the pork cooks to seal in all of the liquid.
- Ladle out some of the juices before shredding if you want a less juicy pulled pork. You can keep the juices to serve on the side or let individual people add the liquid back as they like.
❔ FAQs
Searing isn't a necessary step, but if you want some extra flavor you can sear the pork in a skillet before slow cooker.
Low and slow is typically the best option to ensure the pork retains its moisture, but even at a higher temperature the slow cooker will help keep the pork tender. Some extra moisture can be added in the form of water or your favorite broth.
Tough pork typically means that it isn't fully cooked, whereas a dry or stringy result indicates overcooking. Keep an eye on the pork to prevent a tough or stringy result.

📝 Substitutions and Variations
- Chuck roast can be used instead of pork roast if you prefer.
- Au jus mix can be substituted for gravy mix for a slightly more nostalgic and rich flavor.
- Add onion wedges, potatoes, or baby carrots to the slow cooker to make this an all-in-one meal.
- Mix in some cream cheese and/or sour cream at the end for a creamier version.
Kristin's Kitchen Tip
Aside from the pepperoncini brine, you won't need to add any other liquid unless you know your slow cooker tends to run hot. This can dry out the pork, so keep that in mind beforehand.
🥡 Storage and Reheating
Transfer leftover slow cooker pork roast to an airtight container and store in the fridge for 3 to 4 days. You can also freeze your leftovers for up to 3 months.
Reheat the pork roast in the microwave or in a saucepan, adding some water or broth to prevent drying out. Allow frozen leftovers to thaw fully in the fridge before reheating for best results.
