🧂 Ingredients Needed
- bouillon cube - it may seem like an odd choice, but adding vegetable bouillon infuses this chipotle cheddar dip with a fantastic savory flavor.
- sour cream and mayo - these two ingredients form the base of this dip and give it a creamy and indulgent texture.
- cheese - combine Parmesan with shredded cheddar cheese for the perfect pop of cheese flavor.
- seasonings - I use chipotle powder alongside garlic powder and onion powder for lots of flavor.
- sugar - helps balance out some of the saltiness with a hint of sweet.
- lime juice - cuts through the heavy, savory dip with a pop of citrus.
🔪 Instructions
- In a mixing bowl, crush the bouillon cube with the back of a spoon or fork.
- Add the sour cream to the bowl and mix until bouillon is thoroughly incorporated.
- Add the mayonnaise, Parmesan, cheddar, garlic powder, onion powder, chipotle, sugar, and lime juice.
- Give it a good mix until it comes together, then chill and serve!
❔ FAQs
This powder is made by first smoking jalapenos or chipotle peppers over a natural wood fire, then grinding the peppers. It typically has a deep red color and a deliciously smoky flavor.
Yes, chipotle powder has a bit of a kick! Feel free to adjust the amount in this chipotle cheese dip until you reach the amount of heat you like.
Serve your dip with pretzels, tortilla chips, crackers, pieces of bread, or fresh veggies. It pairs well with just about anything! You could even use it to add some flavor to sandwiches and wraps, or mix a couple of spoonfuls with a drizzle of oil to create a unique salad dressing.
💭 Expert Tips and Tricks
- You can serve this dip right away, but it tastes even better if you give it a couple of hours to sit in the fridge so the flavors can develop!
- Feel free to double or even triple this recipe if you're looking to feed a larger crowd or want leftover dip to keep around.
- Start with a smaller portion of the seasonings, especially the chipotle powder, and give the dip a taste once you're done mixing it up. Continue adding seasonings as needed to reach a flavor you like.
- For a super smooth texture, an electric mixer or food processor can be used to mix this dip.
📌 Creamy and delicious with the perfect kick of heat, this chipotle cheese dip is your new favorite 5-minute appetizer recipe!
💡 Substitutions and Variations
- I recommend using sharp cheddar cheese for best results, but you could also use a different variety of shredded cheese like pepper jack or a Mexican blend.
- Substitute Greek yogurt for the sour cream for a slightly lighter version of this dish.
- Top with chopped green onions, a sprinkle of chipotle powder, black beans, diced tomatoes, cilantro, chives, diced red bell peppers, or a dollop of sour cream.
- For a smoky flavor without as much of the heat, use smoked paprika for some of the chipotle.
- Give this dip an even thicker texture by adding a bit of cream cheese or some tomato puree.
- Another way to add flavor and heat to this dip is by mixing in some adobe sauce, which is also made with chipotle.
🥫 Storage
Keep your dip covered in the fridge, where it'll last for 3 to 4 days (if you don't eat it all up first!)
I don't recommend freezing this dip, as the texture might become grainy when you thaw it and the flavors might not be quite the same.

I'll definately need to put this in the rotation of dips I make for parties. It's kind of funny how sour cream winds up the base for all of them. When we have a get-together, I go through about 4 pounds of it!
I have Oxo's pastry brush, but I learned the hard way that the handle isn't dishwasher safe in the bottom rack. It now has a 30 degree tilt to it. 🙂
