Shiny chocolate is typically a result of the process called tempering chocolate. This requires some extra work, but results in a hardened chocolate that won't melt in your hands or at room temperature and has a smooth, shiny finish. A little bit of oil or butter increases the fat content, which makes the chocolate smoother and easier to work with. It will also stabilize the chocolate and prevent seizing or clumping.
