What's better than a big plate of slow cooker pork chops and potatoes? Just about nothing! This super easy recipe is the ultimate comfort food dish, and it's so easy to make in your crock pot.
Just pop all the ingredients in, turn it on, and let it cook. The tender pork paired with tasty potatoes and melty cheese all makes for a fantastic dinner, and the leftovers can be eaten for breakfast the next day!
I love cooking pork chops in the slow cooker, like for my Pork Chops with Mushroom Soup! It yields perfect results every time, and the hands off cooking frees up time in the evening.
🧂 Ingredients Needed
- diced tomatoes - using canned tomatoes is a great way to provide a bit of sweetness and acidity to counteract the hearty savory ingredients.
- hash browns - I like to use frozen hash brown potatoes for this dish for super easy prep.
- seasonings - a blend of salt, black pepper, cayenne, cumin, and chili powder infuses this dish with warm flavor and a little bit of a kick.
- shredded cheese - shredded cheddar cheese is my choice here, but feel free to switch things up.
- pork chops - the star of the show, you can use either bone-in or boneless chops for this recipe!
🔪 Instructions
- Add tomatoes, hash browns, seasonings, and cheese to a large mixing bowl.
- Mix until well combined.
- Season the pork chops with salt and pepper, then arrange in the bottom of your slow cooker.
- Top the pork chops with the hash brown mixture.
- Cover and cook on low for 6 to 8 hours, then give it a good stir and top with additional cheese if you like.
❔ FAQs
Yes! As long as you fully cook the pork chops, there are no dangers to putting raw meat in a slow cooker.
Typically, bone-in chops will take a bit longer to cook than boneless pork chops. Take this into account when setting an initial cooking time, and be prepared to let them go a little longer if they need it!
💭 Expert Tips and Tricks
- Use a meat thermometer to check the internal temperature of your pork chops. They're done once they reach at least 145 degrees F, and you don't want them to exceed 160 degrees or they'll start to get tough.
- Give the seasoned pork chops a quick sear before adding them to the crock pot. This will create a bit of a crust that adds flavor!
📌 This crock pot pork chops and potato dish is the perfect way to quickly and easily get a hearty and filling meal on the table! It has everything you need for a dinner that's sure to satisfy.
💡 Substitutions and Variations
- Add more veggies like frozen corn, canned beans, or even something like salsa.
- Chop up fresh parsley or fresh cilantro and use as a garnish for a pop of color and herbal flavor.

🥫 Storage and Reheating
Keep your leftover pork chop casserole in an airtight container in the fridge for up to 5 days, or in the freezer for 3 months or so. Reheat over the stovetop or at 50% power in the microwave to avoid drying out the pork chops. For best results, allow frozen leftovers to thaw in the fridge before reheating.
🍴 What To Serve With This Dish
Even though slow cooker pork chops and potatoes have everything you need for a full meal, you could serve it over top Instant Pot Quinoa or this Cilantro Lime Rice! Other good side options are Wasabi Mashed Potatoes or this crowd pleasing Cornbread Casserole.
