This is another variation on that classic chicken + potatoes combo, and one that you'll never not be in the mood for! It's the perfect go-to meal for those nights when you just don't feel like cooking but still want something filling and tasty!

🥘 Ingredients Needed

• baby potatoes - these small potatoes are easy to cut up into pieces of the appropriate-size without doing too much work!
• olive oil - ensure your potatoes get nice and crispy.
• minced garlic
• paprika - adds a burst of color and flavor and makes sure that this recipe is anything but bland!
• salt
• chicken breasts - boneless and skinless work best!

1. Place the baby potatoes, cut in half, into a bowl with the garlic, paprika, salt, and about half of the olive oil.
2. Toss well to coat.
3. Transfer the potatoes to a tray pan and bake for 10-15 minutes.
4. In the meantime, add the chicken to the bowl with the rest of the olive oil and coat well.
5. Once potatoes are browned, add the chicken to the tray pan and bake for another 20-25 minutes, until the chicken is cooked through.

The leftovers for this recipe keep really well and are still delicious for several days afterwards! Leftovers should last for 4-5 days if stored properly in an airtight container.

To reheat, one method is to pop your leftovers into the oven at around 350 F and heat through. You could also reheat in the microwave in a pinch!

In the freezer, your chicken and potatoes will be good for around 6 months or so. Make sure to thaw them out when it comes time to reheat by leaving them in the fridge for a while, overnight if possible. Then follow one of the reheat methods above!
