Of course, you can just dip the chips in chocolate and leave them as is, which means you can enjoy them any time of the year! They're so easy to prepare and make for a lovely choice when you want a special snack.

🥘 Ingredients Needed
- potatoes - I used russet potatoes, but any kind of potato will work.
- canola oil - a great oil with a mild flavor that crisps up your chips.
- salt - I like to use sea salt if possible.
- chocolate chips - for melting and dipping.
- Slice potatoes as thin as you can.
- Soak in cold water for about 10 minutes, then remove and pat dry.
- Arrange the potatoes in a single layer on a foil-lined baking sheet and brush with canola oil. Sprinkle with salt, then flip the potatoes and repeat on the other side.
- Bake for 22-25 minutes at 400 degrees F. Flip halfway through. Remove from the oven and allow to cool to room temperature.
- Melt the chocolate chips in the microwave or in a double boiler, then dip the chips one at a time.
- Place on a wax paper-lined surface and sprinkle with more salt or holiday sprinkles.
Your chocolate covered chips will last for about 5 days when stored properly. Keep them in an airtight container to prevent the chips from going stale, and use wax or parchment paper between layers if you have to layer them. Keeping them in the fridge may also help extend their life. But they really are the yummiest when they're fresh!
You can use regular chocolate chips to melt as long as you're careful during the melting process and melt them in increments. You may also want to use candy melts, which are specifically made for melting and then hardening again.
Be sure to really pat the potatoes dry after soaking them, and don't drown them in the oil either. Give them a slight amount of breathing room during the baking process as well.
💭 Other Helpful Tips
- No need to peel your potatoes before baking, the skins are great with these chips!
- Canola oil spray is an easy way to quickly coat your chips.
- These chocolate covered chips can also be made in the air fryer! Cook for 15-17 minutes at 375 degrees F and flip them every 5 minutes or so to promote even cooking.
- You can also make these in the microwave by cooking them on high for 3 minutes, then flipping and cooking at half power for another 3 minutes.
For an even easier version of these chocolate covered chips, use store bought potato chips. The ones with ruffles work really well to really get as much chocolate on the chips as possible!
- The sprinkles on these chips can be customized to your preference or to fit other holidays.
- You can also use dark chocolate, white chocolate, or a combination of chocolates for dipping.
- Some other great toppings to sprinkle on top of the chocolate are crushed nuts, cereal, cinnamon sugar, or chopped pretzels

Chocolate Covered Potato Chips
- Preheat oven to 400 degrees F (200 degrees C).
- Slice the potatoes very thinly. The thinner, the better!2 large russet potatoes
- Soak the potatoes in cold water for 10 minutes. Remove potatoes from the water and pat dry.
- Place the potatoes on a baking sheet (line with non-stick aluminum foil for easy cleanup). Brush the potatoes with the canola oil, then sprinkle with salt. Flip the potatoes and do the same on the other side.2 tablespoons canola oil, 1 teaspoon salt
- Bake for about 22-25 minutes, flipping the potatoes about halfway through. When the potatoes are golden and crispy, remove them from the oven and let them cool.
- Melt the milk chocolate pieces the microwave or in a double boiler (for a makeshift double boiler, you can place a heat-safe bowl over a saucepan with some boiling water in it).2 cups chocolate chips
- When the chocolate is melted, dip the chips into the chocolate, one at a time, then lay them on a piece of wax paper spread out over a tray, and sprinkle them with salt flakes or holiday sprinkles.salt flakes or holiday sprinkles
- You can allow them to cool at room temperature or place them in the refrigerator for a bit to cool more quickly.
- Makes about 30-40 chips, depending on the size of your potatoes and how thinly you slice them.
- There is no need to peel the potatoes prior to slicing and baking, although you can if you want. We prefer to leave them on!
- You can substitute canola oil spray, and simply spray the potato slices prior to sprinkling with the salt.
- To make these in the air fryer, preheat your air fryer to 375 degrees F. Follow the directions to prepare the potato slices, then place them in the air fryer basket in a single layer. Cook for about 15-17 minutes, flipping every 5 minutes or so.
- To make these in the microwave, prepare the potato slices as directed. Microwave on high for 3 minutes, then flip them and microwave on 50% for another 3 minutes. Remove any chips that are done, and continue cooking any that are not done at 50% power, 1 minute at a time, until done.
- For easier melting, use chocolate candy melts instead of the chocolate chips.
- To make this recipe super-easy, use store-bought potato chips! The ruffled kind work really well.
- These can be decorated for any occasion - just vary the colors of the sprinkles you use.
