🧂 Ingredients Needed
- vegetable broth - you can also use chicken broth if you want a slightly different flavor.
- evaporated milk - helps form a thick and creamy sauce.
- pasta - I used gemelli for this lemon dill pasta, but feel free to use whatever you and your family like best.
- Parmesan cheese - gives your pasta a comforting cheesy flavor.
- lemon juice - offsets the savory flavors with a bright acidic punch.
- dried dill - this herb perfectly complements the lemon juice with its slightly grassy and citrusy undertones. You can also use fresh dill for garnish.
🔪 Instructions
- In a large saucepan, heat the broth to a boil.
- Stir in the evaporated milk.
- Add your pasta and bring back to a boil.
- Cook for about 7 minutes, then stir in the Parmesan cheese and wait for the pasta to become tender.
- Add the lemon juice and dill.
- Combine well, then serve with an optional garnish of fresh dill.
❔ FAQs
To give your pasta a delicious homemade flavor, be sure to use the freshest ingredients you can find. Generally, you'll want to salt your water well and save a bit of the water before draining. This dish doesn't call for boiling water and instead cooks the lemon dill pasta right in the sauce, which infuses it with flavor!
The major difference is that the flavor of dried dill is more concentrated than fresh dill due to the drying process. You can substitute one for the other; keep in mind that 1 teaspoon of dried dill is equal to approximately 3 teaspoons/1 tablespoon of fresh dill.
Lemon juice provides a bright and acidic flavor that contrasts well with many of the savory herbs, spices, and other ingredients commonly used with pasta. It pairs particularly well with cheesy Parmesan and aromatic dill.
💭 Expert Tips and Tricks
- Stir constantly while adding the Parmesan a little bit at a time. This will ensure even melting and a nice smooth sauce.
- If the liquid has all evaporated or been absorbed and the pasta doesn't seem fully cooked, feel free to add a bit more broth or even some water.
📌 This simple pasta with lemon will quickly become a new family favorite! So easy to make in one pot, prep and cleanup are both a breeze, making this the ideal dinner for busy weeknights.
💡 Substitutions and Variations
- Bottled lemon juice works fine here. If you want to use fresh lemon juice, you'll need to juice about 2 lemons for 3 tablespoons of juice.
- Add salt and pepper to taste.
- For an even stronger lemon flavor, zest a lemon and stir the zest into the pasta along with the juice and dill. You can also use this zest as a garnish for a pop of color and lemony flavor.
- If you like a bit of heat in your lemon dill pasta, stir in some red pepper flakes.
🥫 Storage and Reheating
Once cooled, transfer your One Pot Lemon Pasta to an airtight container and store in the fridge for 5-6 days. This pasta can also be frozen for several weeks. Thaw in the fridge before serving from frozen.
To reheat, either pop your pasta into the microwave or return it to a large pot or saucepan and cook over medium until heated through.
🍴 What To Serve With This Dish
Pair your simple lemon pasta with a quick veggie side dish for a filling and healthy meal!
