Grilled sandwiches make for a fabulous weeknight dinner. They are easy to put together, taste delicious, and you can make them without a lot of crazy ingredients.
Or you can make them with crazy ingredients! Seriously, you can put some many yummy ingredients in your grilled sandwiches that you'll never be bored with a "just another sandwich" for dinner again.
Really, it's whatever you're in the mood for and you have on hand. No matter how simple or involved your choose to make your hot dinner sandwiches, the fact remains that they are a delicious, time saving meal.
One of our favorites is Roasted Red Pepper Grilled Cheese.
Grilled Cheese Oven Recipe To Save Time
Did you know you can make your grilled cheese sandwiches in the oven?
It's true. This Grillicious Cheese Sandwich is a staple in our home. And we enjoy so many variations of this simple classic, as well.
The great part is that you're not making them one or two at a time on a skillet; you can make enough for the whole family on a cookie sheet and bake them in the oven...without sacrificing your buttery, crispy bread and melty cheese filling. The only thing you're losing is time standing over your stove; it's so much easier to make grilled cheese oven sandwiches!

How To Make Roasted Red Pepper Oven Grilled Cheese Sandwiches
Step 1.
Roughly chop your roasted red peppers and pat dry. Wash and pat the spinach dry too. Don't skip this step, either. You don't want all that extra moisture in your sandwich or you'll end up with soggy bread instead of buttery, crisp, gold brown goodness.

Step 2.
Butter 8 slices of bread, on 1 side. Just like traditional grilled cheese, you want that butter!
Step 3.
Place 4 of the buttered slices, butter side down, onto your baking sheet.
Place 4 slices of bread buttered side down on baking sheet
Step 4.
Layer on your ingredients: 1 slice of cheese, spinach, peppers, and then top with another slice of cheese.
Step 5.
Place the remaining slices of bread on top, buttered side facing up.
Place the remaining 4 pieces of bread on top, buttered side up!
Step 6.
Cook your grilled cheese sandwiches in the oven. After 5-7 minutes, flip them over and bake for an additional 5 minutes so both pieces of bread are golden brown and crispy...and filled with gooey, melty cheese, smoky sweet roasted peppers, and the tang of fresh spinach.
You could also cook them on a skillet on your stovetop if you wanted to. The recipe is still delicious that way!
Step 7.
Enjoy.

Roasted Red Pepper Oven Grilled Cheese
Ingredients
- 1 roasted red pepper
- 6 ounces fresh spinach
- 8 slices bread
- 4 tablespoons butter
- 8 slices cheddar cheese
Instructions
- Preheat oven to 450 degrees F.
- Roughly chop your roasted red peppers and pat dry. Wash and pat the spinach dry too.
- Butter 1 side of each of the 8 slices of bread.
- Place 4 of the buttered slices, buttered side down, onto your baking sheet.
- Layer on your ingredients: 1 slice of cheese, spinach, peppers, and then top with another slice of cheese.
- Place the remaining slices of bread on top, buttered side facing up.
- Bake in the oven 5-6 minutes, then flip the sandwiches and bake about 5 more minutes, until the sandwiches are golden brown and crispy.
Notes
- Substitute your favorite cheese for the cheddar. American, Swiss, mozzarella, and pepper Jack are all good options!
- Use parchment paper on your baking sheet for easy cleanup after your meal.
- If you haven't made grilled cheese in your oven before, make sure you check it after 3-4 minutes in case your oven runs hotter than mine to avoid burning.
- These sandwiches can also be grilled on the stove top in a skillet or on a griddle if you prefer.
