You don't have to know what compote is to fall in love with this sweet and fruity nectarine compote dessert. It's delicious served over angel food cake, pound cake, or vanilla ice cream. Or, just eat it by the spoonful - I won't tell!
I am practically drooling as I type this, looking at these photos and remembering how delicious this dessert was!
I had some nectarines in the house, but the kids were not really interested in eating them. I can get them to eat apples, bananas, grapes, and 'Cuties', but they are not really interested in other fruits, unless I dress them up.
So I dressed this one up to the hilt! And the best part was that it was really easy, especially if you cheat like me and buy the angel food cake to go underneath.
You can also serve this compote over pound cake, shortcakes, or ice cream, and probably some other things, too!
Since I was not really culinarily inclined (yes, I think I just made up a word! that's ok, right? 🙂 ) until a few years ago, I did not even know what compote was until I heard it on a cooking show. So, if you are like me and not really sure, it is just fruit stewed or cooked in a syrup, usually served as a dessert.
I watched what they did on the cooking show (can't remember which show at this point) and saw it was just fruit, honey, water, and a little sugar and salt. And there you go! Very easy, delicious, and actually not too bad in the calorie department if you serve it over angel food cake and watch your portion size.
And now that I've entered into the world of compote, I want to try more! Like this quick and versatile strawberry compote, made with just 3 ingredients and ready in 10 minutes!

Ingredients
Instructions
- Place all ingredients in a saucepan over medium heat.3 nectarines, 2 tablespoons honey, 1 teaspoon sugar, â…› teaspoon salt, 2 tablespoons water
- Heat while stirring until mixture is thickened and warm, about 5 minutes.
- Serve over cake or ice cream.
